Dr Eyal graduated from the University of Pretoria in 2000 (MBCHB), following which, she completed her internship at the Pretoria Academic Hospital (Steve Biko Academic Hospital) in 2001 and community service at 1 Military Hospital in 2002. In 2003, she started her registrarship at the University of Pretoria and received MMedPath in 2007.

After spending one year as pathologist and lecturer at Department of Forensic Medicine, at the University of Johannesburg (2008) – with an interest in forensic pathology, Dr Eyal returned as a senior pathologist and lecturer to the University of Pretoria/NHLS until 2014 whereafter she  joined Ampath Laboratories.

Dr Eyal moved to George in 2018 and joined Pathcare in March 2020. She has a keen interest in dermatopathology.
